The pride of Spanish: Iberico pig 
Iberico pig, Celtic breed and Asian pig are the three major most completed strains, derived all other strains. 
Iberico pigs are mainly raised in the southwest and west of Spain. 
Their head is small, the nose is big, the ears are drooping and cover the eyes, the limbs are thin but the thighs are flat. 
The weight of Iberico pig is relatively lighter than many other pig breeds, thus, ideal for foraging; it can easily adapt to the wet winters and dry summers of the Mediterranean basin. 
Iberico pigs consume a lot of acorns in the winter, and the oleic acid from the acorns can be preserved is the feature of Iberico pig. 
The color as deep as beef, meat is tender and juicy, and the muscle fat is incredibly delicious!!

Part: Pork Collar 
Pork Collar includes part of the neck and the fore five ribs (equivalent to the upper rib row of the cow), which is one of the best parts of the pig. 
Meat is tender consists of the just right amount of marbling fat, which brings a refreshing and smooth taste. 
In addition, the taste of meat is strong in this position, no matter whether by roasting, sautéing, sliced into small pieces used for barbecue or hot pot, it is also very delicious.
