Part: Oyster Blade
Oyster blade is the muscle that sits below the shoulder blade,bisected by a long line of thin connective tissue. 
When separated from the shoulder, it's cut into steaks. It is flavorful and tender. 
Oyster steak has a high moisture content and does well when cooked using high heat, such as with grilling, broiling or pan searing.
